I went to a Viking Cooking School class recently titled "A Girls Night Out in Rome." The food was delicious and I learned how to do something new; make pasta! They played lots of great Italian music by Louis Prima and Frank Sinatra as well as few of my other favorites. It definitely helped to get us in the mood! Our menu started with a Prosecco and strawberry cocktail followed by marinated olives and peppers on toasted bruschetta. For the main course we made homemade ravioli with spinach and ricotta topped with tomato pancetta butter (delicious!!) and veal saltimbocca, which is a veal cutlet wrapped in sage and prosciutto. For dessert, we had dark chocolate gelato with chocolate shavings and dark cherries. Everything was tasty and beautiful to look at. I would definitely recommend this class!
